A culinary journey stretching from Pera to Smyrna, intertwining cultures, and a shared culinary memory that remains…

This time, our culinary journey takes us from Istanbul to Izmir, from Pera to Smyrna; we trace the shared culinary culture that emerged in the cosmopolitan port cities of the 19th century.

In 19th-century Ottoman port cities, Levantines, Sephardic Jews, Greeks, Armenians, and Muslim communities came together in the same markets, neighborhoods, and at the same dinner table, creating a multifaceted urban culture. In this evening, where we will experience this shared culinary memory through the Taste Pavilion approach, each dish will bring together the products, techniques, and table traditions of different communities.

In this evening, we will examine the cosmopolitan city life of the 19th century through the lens of shared dining culture and food in Ottoman-era cities, coming together around a common culinary memory that stretches from the past to the present.

Join us at the Rare Gastronomy Platform for this experience, presented with the Taste Pavilion's interpretation.

Levantine social life and snack culture

The journey begins in the social world of 19th-century Pera, surrounded by pastry shops, hotels, theaters, and wineries. The aperitif tradition from Europe meets Istanbul's fish, olives, citrus fruits, and small mezes.

THE SHARED MEMORY OF THE BOSPHORUS — STUFFED MACKEREL

A meeting of Greek, Armenian and Ottoman cuisines in Istanbul.

Mackerel from the Bosphorus is combined with the Ottoman stuffed dish tradition, prepared with pine nuts, currants, onions, and spices. It's a dish that belongs not to a single community, but to Istanbul's multicultural culinary memory.

SMYRNA GARDENS

Artichokes, broad beans and Aegean herbs showcase the multicultural spirit of Izmir.

Artichokes, broad beans, Aegean herbs, olive oil, and citrus fruits were common ingredients on the tables of Sephardic, Greek, Levantine, and Muslim communities in Izmir. The plate depicts the fertile gardens of Smyrna and its seasonal culinary culture.

PERA STYLE BEEF CHEEK

The encounter between European cooking techniques and Ottoman flavors.

Long, slow cooking, concentrated broth, and refined sauce techniques; allspice, smoky flavors, grapes, and fruity meats come together in this dish. It's not a copy of a historical recipe, but a contemporary interpretation inspired by the cultural encounters of Pera.

THE LAST EVENING AT MARQIZ

Pera's pastry shops, salons, and urban entertainment culture.

The journey concludes with a dessert inspired by the elegant patisseries of Pera. European pastry techniques are reinterpreted with the aromas of Istanbul's coffee, cherries, almonds, and citrus fruits.
